About Chef Jay Merchant

I began my professional hospitality journey in 2006 when I migrated from Zimbabwe to Australia to study my Diploma in Hospitality Management. Coming from a Afro-Indian family background I have a diverse range of knowledge when it comes to flavours, spice combinations and foods. My passion comes from both my parents drive for making the tastiest dishes from family recipes to making other dishes their own with a twist. I take pride in the work that I do and in the long-term relationships that I’ve built with industrial experts, suppliers and like minded hospitality professionals.

 

I am a firm believer in the sustainability of our food sources, supporting the local W.A economy and small businesses, the environment and the impact the industry has on it, working smart, working together, and having fun along the way!

My journey has given me the opportunity to work on a number of incredible projects in the hospitality sector, with some even more incredible people and the amazing W.A. produce, which have allowed me to grow and establish myself within this competitive industry.
